The Latin Dances can be broadly separated into 2 catergories. The social dances and Dancesport.
Dancesport consists of the international competitive versions of these 5 dances: Cha Cha, Rhumba, Samba, Paso Doble and Jive.
The latin social dances would be forms like Lambada, Salsa, Merengue, Bachata, Zouk and etc.
Difference between them is Dancesport's purpose is competition so it's more showy and routine driven whereas the latin social dance emphasises the interaction of the 2 dancers and how they work to look good together. Though social dancing is not planned, the social latin dances can also be set into routines for show purposes. Fusion with other forms is also a common practice for social latin dance performances.
